This recipe takes the rich, garlicky goodness of Filipino adobo and transforms it into a next-level burrito stuffed with caramelized pineapple, creamy avocado, and tangy quick-pickled onions—a perfect balance of sweet, savory, and tangy flavors.
By now, you probably know that I love experimenting with leftovers. Because really, revamping leftovers is the best part of meal planning!

See, if I were making this burrito from scratch, it would take way too much effort.
Sometimes, the best food combos—like this one—are a lot of work to make entirely from scratch, so we tend to stick to the classics and pay top dollar at restaurants or food trucks for these trendy or chef-inspired (insert better marketing buzzword here) creations.
In reality, you can enjoy both—at home—for a fraction of the price and effort with just a little smart planning.
Adobo actually tastes better the next day! After a night in the fridge, the flavors deepen, and the sauce thickens, making it perfect for wrapping in a tortilla without getting soggy.
If your adobo is on the saucy side, you can thicken it up with cornstarch or just ditch the sauce (and eat it with your rice instead!) for this recipe.

You can also eat as a large taco if folding a burrito isn’t your thing. This portion is waaay too much for wrapping it into one anyway. I repeat. Use smaller portions or eat it as a taco if you’re going to use this picture as reference!
