You asked, and I’m delivering! This Japanese-Style Keema Curry was one of the star recipes from my frozen ground beef hack video, and it’s been blowing up my DMs ever since.

If you missed that video where I show you how to freeze ground beef for cooking straight from frozen, definitely check it out (watch on IG or TikTok) – it’s a total game-changer for quick weeknight dinners.

This recipe is hands-down one of my favorite low-effort, high-reward meals. It takes just 15 minutes from start to finish (10 minutes once you’ve gotten the hang of it), uses mostly frozen ingredients, and somehow tastes like you spent way more time on it than you actually did. Plus, it tastes even better the next day, so leftovers are actually exciting. Though I highly doubt you’d have any left.

Why This Recipe Works So Well

The beauty of this dish is that you can cook almost everything straight from frozen. Your ground beef, garlic, onions, and carrots can all go in frozen – no thawing required. The only thing you need to prep fresh is dicing the potatoes. And here’s a bonus: frozen ground beef actually sears better than thawed beef because it holds its shape and doesn’t release as much moisture.

The secret to making this extra quick is keeping everything diced small. Smaller pieces cook faster without losing any flavor, so you get that slow-cooked taste in a fraction of the time.

Ingredients

  • 1 tbsp neutral oil
  • 0.5 onion diced
  • 12 oz ground beef
  • 1 small gold potato diced
  • 1 cup frozen diced carrots or peas and carrots mix
  • 2.5 cups water or low-sodium chicken broth

Seasoning blend:

  • 3 cubes Japanese curry roux coarsely grated
  • 1 tbsp Madras curry powder use 1/2 tbsp for milder heat
  • 1 tbsp ketchup
  • 0.5 tbsp Worcestershire sauce
  • 1 tsp Hershey’s dark unsweetened cocoa powder
  • 0.25 to 0.5 tsp sugar optional, to balance bitterness
  • Soy sauce to taste

To serve:

  • 2 large eggs fried
  • 2 cups steamed medium or short-grain white rice

Instructions

  • Heat oil in a medium saucepan over medium-high heat. Add onion and sauté until translucent, about 3 minutes. Add ground beef, let it sear for 1 minute. Cook until fully browned, breaking it into small bits.
  • Stir in diced potato and frozen carrots (or peas and carrots mix). Pour in water or broth and bring to a boil. Reduce heat, cover, and simmer for 8-10 minutes, until potatoes are tender.
  • Meanwhile, fry 2 eggs to your desired doneness. Set side.
  • Remove the lid and stir in the seasoning blend. Simmer uncovered, stirring frequently, until the sauce is thick and glossy, 1-2 minutes. Add soy sauce to taste.
  • Spoon keema curry over steamed rice and top each with a fried egg.

Notes

  • Keema-style: This version uses ground meat and diced vegetables for faster cooking and easier serving—ideal for weeknights.
  • Make-ahead: Curry keeps well for 3 days in the fridge and tastes better over time! To reheat, add a splash of water to loosen the thickened curry.
