The EASIET and tastiest way to use up leftover napa cabbage in your fridge! This recipe is a better twist on the classic Japanese savory pancake and a must-try IMHO.

This recipe is adapted from one of my favorite Asian Fusion recipe developers, Marion Grasby. I love traditional okonomiyaki, but I think I love this version just a bit more.
Okonomiyaki is a beloved Japanese savory pancake, but this version takes a unique spin by using sweet potato instead of nagaimo and napa cabbage instead of regular cabbage. The result is a pancake that’s easier to make, naturally sweeter, and with a more tender texture.
Nagaimo can be tricky to find and use unless you frequently cook Japanese dishes. Napa cabbage is much softer that regular cabbage, making it easier to shape the pancake.
For context, the potato serves to keep the pancake light while holding it together (which is what the nagaimo in the traditional recipe does).
I chose sweet potato over regular because the added sweetness pairs well with the natural sweetness from the napa cabbage. I don’t know if this was Marion’s intention when developing this recipe, but they’re definitely a great combo!
Since buying a 4 oz sweet potato is near impossible, I recommend turning them into sweet potato fries as a side for this meal. ;)
If you must use the napa cabbage’s stems, slice them extra thin so the pancake stays tender.
